Gerri’s Taco Casserole
2 doz. Corn tortillas, cut into 8 pieces (like a pie) and fried OR 1 Lg. bag of Tortilla Chips
1 lg. onion, chopped
1 lg. green pepper, chopped
1 cup celery, chopped
1 ½ lbs. ground beef
2 cups cheddar cheese, shredded
1 – 16 oz. can tomato sauce
Brown beef and drain off fat. In an oblong baking dish, place layers of tortillas, beef, vegetables and cheese (about 3 layers), ending with cheese. Pour tomato sauce over (you can add a little chili powder to sauce first if desired). Cover and bake 1 hour at 325°.
Once a month we would get together at mom’s house to celebrate whoever was having a birthday that month. This was one of the recipes that my mom would make, alternating between this casserole and her absolutely delicious fried chicken. And of course, home-made carrot cake for dessert. Mom, you are so missed every day.
